Homemade Caesar Salad Dressing

Ingredients

  • small cloves garlic, (minced)
  • teaspoon anchovy paste (see note)
  • tablespoons freshly squeezed lemon juice, (from one lemon)
  • teaspoon Dijon mustard, Kozlik Hot Honey Mustard works
  • teaspoon Worcestershire sauce
  • cup mayonnaise, (best quality such as Hellmann's or Duke's)
  • cup Grated Parmigiano-Reggiano, Cheap Cylinder of Parmesan Cheese works
  • teaspoon salt
  • teaspoon freshly ground black pepper

Instructions

    Add everything into a medium bowl then whisk until well combined. Taste and adjust to your liking. The dressing will keep well in the fridge for about a week.

    Note: While the cheap cylinder of parmesan cheese is acceptable in the dressing, adding freshly grated Parmigiano-Reggiano on final salad makes a big difference.
