Sausage and Cheese Frittata

Frittata with Sausage, Cheese, and veggies.
Ingredients
- Large Eggs
- Hot Italian Sausage
- Small Yellow Onion, Diced
- Cloves of Garlic, Diced
- Orange or Red Pepper, Diced
- grams Cremini Mushrooms, Sliced
- teaspoon Italian Seasoning (Basil and/or Oregano)
- tablespoons Olive Oil
- Cheddar Cheese, Grated, Enough to cover top of Frittata

Preheat oven to 350F. Beat the eggs in a large bowl, adding a small amount of water and optional milk/cream and salt. Grate the cheese and set aside.

In the oven-proof skillet, heat 1 tablespoon of olive oil over high heat until runny, then add sausage. Brown the sausage, breaking it apart into 1 inch pieces with a wooden spoon or spatula. Remove to a plate.

Add 1tbsp of olive oil then saute the onion and peppers over medium heat until soft (5-10 minutes), adding garlic near the end. Scrape up leftover brown bits from the bottom of the pan.
Note: Prior to this step, consider deglazing the pan with a small bit of water and a splash of wine vinegar.

In a separate pan, add 1tbsp of olive oil over medium heat then cook the mushrooms until most of the moisture has left (3-5 minutes).

Combine the sausage, mushrooms, and veggies in the oven-proof skillet and make sure they cover the bottom of the pan in an even layer. Turn to low heat.
Note: Consider adding a small amount of Red Pepper Flakes for additional heat.

Pour the eggs into the oven-proof skillet and let cook until the sides are starting to set (3-5 minutes).

Sprinkle the spices and cheese over the top of the eggs evenly, then add to the oven for 10 minutes. Remove and check if it's cooked (it won't jiggle when moved if cooked). Let rest for 5 minutes, then cut into wedges and serve.
